Chocolate Drizzle Cranberry Cake | The Vegan Corner

This state-of-the-art dessert is a delicious, super-soft, spongy cake with a sweet layer of cranberry jam, and drizzled with a rich, decadent chocolate sauce! This cake is cruelty-free and amazing, so no need to feel guilty indulging in it!

INGREDIENTS:

For the cake:
½ cup granulated sugar
1 cup non-dairy milk, cold
1½ tbsp vegetable oil (optional)
½ tsp vanilla extract
zest of ½ lemon, grated
8oz all-purpose/plain flour, sifted (1¾ cup + 1½ tbsp)
3¼ tsp baking powder

For the filling:
5 tbsp granulated sugar
¼ cup orange juice
5.6oz cranberries

For the chocolate sauce:
½ cup coconut milk
3.5oz dark chocolate, chopped
